Mexico City is one of the most populous cities in the world, with 8.8 million people in the main part of the city. Mexico can trace some of its cultural heritage back to the Aztec and Maya peoples who once controlled much of Central America, but equally it owes a great deal to the colonial heritage from Spain.

Made from hominy corn with plenty of herbs and spices, the dish is traditionally stewed for hours, often overnight. Once it’s ready to serve, lettuce, radish, onion, lime and chilli are sprinkled on top. While breakfast is highly personal and varies a lot from person to person, some of the most common types of breakfasts in Mexico include beans, eggs, salsa, tortillas, sweet bread, and coffee. It’s seasoned with spices and often garnished with chili peppers, onions, avocado, salsa, and limes.

Street food

When the craving for satisfying comfort food meets the need for a straightforward weeknight dinner, chicken enchiladas are a guaranteed winner. They’re easy, filling, and take less than an hour to prepare from start to finish. These loaded tortas are a fun weekend project, and many of the steps can be done ahead of when you plan to serve them. Plus, you’ll never make refried beans the same after trying this method out. After all, one of the things Mexico is known for is its amazing street food options. Some good street food delights will go a long way in making you appreciate the experience more. Other ingredients include fruits, nuts, chilli peppers, and spices like black pepper, cinnamon, or cumin. Three states claim to be the original home of mole (pronounced ‘mol-eh’), a rich sauce popular in Mexican cooking. There are myriad types of mole but all contain around 20 or so ingredients, including one or more varieties of chilli peppers, and all require constant stirring over a long period of time. Perhaps the best-known mole is mole poblano, a rusty red sauce typically served over turkey or chicken.

Cochito, a dish exclusive to Chiapas.Similar to other regions in Mexico, corn is a dietary staple and other indigenous foods remain strong in the cuisine as well. Along with a chile called simojovel, used nowhere else in the country, the cuisine is also distinguished by the use of herbs, such as chipilín and hierba santa. Like in Oaxaca, tamales are usually wrapped in banana leaves , but often chipilín is incorporated into the dough.
